Gluten Free Peanut Butter Cookies (that don't suck)
1/2 C PB 1/2 C softened margarine (stick) 1/2 C sugar 1/2 C brown sugar 1 egg 1/2 tsp vanilla 1/2 tsp baking soda 1/4 tsp sea salt 1 C sweet rice flour 1/4 C soy flour
Mix. Roll into 1 inch balls, then squash to make cookie shaped. Bake at 375 F for about 10 minutes. ____________
