Ok here's a great recipe:
Shrimp Scampi for One 1 1/2 Tbsp unsalted butter
1 Tbsp olive oil
1 large garlic clove, peeled and minced (about 1 tsp)
1 medium shallot, peeled and minced
6 extra large raw shrimp (16-20 per pound) or 12 large shrimp (30-40 per pound), peeled and deveined
2 Tbsp dry white wine
1 Tbsp chopped fresh parsley
1/4 tsp Italian seasoning
generous pinch hot paprika or cayenne pepper

Heat butter and oil in a heavy 8" skillet over medium-high heat. When butter foam starts to subside, add garlic, shallots, and shrimp. Cook, stirring constantly, for 3 minutes or until shallot is translucent..
Add wine, parsley, Italian seasoning and paprika or cayenne. Stir well and season to taste with salt. Cook 2 minutes. Serve immediately. This is great over linguine or spaghetti, with a little parmesan grated over the top.
PS: don't be too generous with the wine in the recipe...you deserve a glass or two, after all that cooking you just did
