2-4 tbsp. mayonnaise 1 tsp. sugar 1/2 tsp. lemon juice 1 apple 1/2 c. diced cooked chicken 1/2 c. diced celery 1/4 c. Baker's angel flake coconut, toasted 1 sm. carrot, cut in thin strips
Combine mayonnaise, sugar and lemon juice in bowl. Cut half the apple in slices; set aside. Dice remaining apples. Stir in diced apple, the chicken, celery and 3 tablespoons of the coconut into the mayonnaise mixture. Serve on crisp spinach leaves or other salad greens with carrot sticks and reserved apple slices. Makes 1 1/2 cups or 1 entire serving.
