1 lb boneless pork loin cut into small cubes 1 lb beef stew meat 1 lb ground turkey or ground beef 1 medium vidalia or sweet onion 1 medium yellow onion 1 medium white onion 8 cloves of garlic, chopped or minces 14 oz canned diced tomatoes flavored with roasted garlic 14 oz can kidney beans, save the liquid 1 cup Quaker oats ( not quick cooking) 1/4 cup bourbon 4 tablespoons chili powder 2 tablespoons olive oil 1 tablespoon oregano 1 tablespoon basil 1 tablespoon sugar ( the sugar cuts the acidity of the tomatoes) 1 tablespoon cocoa powder 1 tablespoon hot paprika ( use regular if you don't have hot) 1 tablespoon ground coriander 1 tablespoon ground cumin 1 tablespoon red pepper flakes 2 teaspoons hot sauce ( any kind that you like, use more to taste) 2 teaspoons Mexican cinnamon ( regular if you don't have the Mexican type) 2 chicken bouillion cubes 1 teaspoon black pepper
Mix the oregano, paprika, chili powder, cumin, bouillon, sugar, hot sauce, cocoa, red pepper flakes, bourbon, coriander and tomatoes in a good sized stock pot. Pour the reserved liquid from the kidney beans into a measuring cup and add enough water to equal two cups. Put this mixture into the pot and bring to a boil... remove from heat. In a large pan, saute the pork and beef with the onions and garlic in the oil. Add to pot with the tomato mixture, Bring back to boil. Simmer until meat is tender. Stir in the beans and the oats. Continue to cook and stir occasionally, an additional 15-30 minutes. This Chili will be a dark color and be very thick. Don't let the cocoa powder scare you, it does not make the chili taste like chocolate, it makes it rich and delicious!!
