These are my own special recipe--great on salads but SPICY!!

1/2 lb domestic mushrooms--pick the very small ones or cut bigger ones in half--clean thoroughly (if you wash them, make sure they are totally dry before using)

A jar

Put the mushrooms in the jar. Add 1/3 jar of white vinegar, 1/8 jar balsamic vinegar, 2 chopped green onions, 3 crushed garlic cloves, 1 tsp curry powder, 1 tsp red pepper flakes OR 2 sliced jalapenos (no seeds!!), 3 tbsp olive oil, and 1/2 tsp cracked black pepper.

Close jar and shake really hard. Put in the fridge. Let sit at least 12 hours, preferably 24. WARNING--the longer these sit in the fridge, the HOTTER they get--after a week they'll clear your sinuses! Big Grin

Why do they have to be totally dry if you are getting them wet again?

Because otherwise when you put them in the vinegar, all teh water in them will come out and ruin the flavor.
