I would like to can tomatoes, they are so much better in my chili and sauces, then the ones I buy in the grocery store-But I don't know how. Please Help!!

Hi. This is how I do my tomatoes.
First I put washed tomatoes into a pan of boiling water for a couple of minutes.
Then I put them into a sink of cold water and peel and core them.(putting them into the hot water helps the skins just slip off.)
From here, I either leave them whole or cut them up and cook them in a large pot for 15 to 20 minutes.
After that, I ladle them into jars 1/4 inch from the top using the juice to cover the tomatoes.
Use a rubber spatula to get the air bubbles out.(Just run it along the inside between the tomatoes and the jar.)Put the lids on.
Now put the sealed jars into a pot with enough boiling water to cover them and process for 15 minutes.
Remove jars and allow to cool. They should seal quickly, but can take up to 1/2 hour.

This is just one way of doing this. My mother would put her tomatoes in the jars before cooking, adding enough water to cover the tomatoes. Then she would process them for 1/2 hour.
Either way makes pretty good tomatoes. Good luck!!
