I have a over abundance of tomatoes and am planning on canning them. I am looking for some canning recipes for enchilada sauce and pizza sauce.

I don't have a recipe titled 'enchilada' or 'pizza' sauce. The closest I come to it is :

Hot Chili Sauce

4 to 5 pounds fully ripe tomatoes
1 large onion, chopped
3/4 cup sugar
1 1/4 cups cider vinegar
1 tsp. crushed hot red pepper
1 tps. mustard seed
1 tsp. salt
1/2 tsp. ground ginger
1/2 tsp. nutmeg
1/4 tsp curry powder

Peel and coarsley chop tomatoes. There should be 8 cups.
In a heavy kettle combine all ingredients. Bring to a boil. Reduce heat and simmer gently, uncovered, until very thick, about 2 hours.
As mixture thickens, stir very frequently to prevent sauce from sticking and scorching.
Ladle into clean hot jars and seal immediately. To keep for any lengh of time, process 15 minutes in a boiling-water bath.
