Use a food mill for this if you have one, you won't have to peel or core the apples if you do and cooking them in their skins adds flavor. I use the Victorio Multi-Strainer for mine, makes the job much faster and easier.
Wash apples, put them in a pot and add a very small amount of water. Cover and cook slowly until tender, about 15 to 20 minutes.
Put cooked apples through the food mill to remove the skins and seeds.
Add sugar and cinnamon to taste.
Now, it is your choice to either can or freeze the applesauce.
To freeze: Let mixture cool a bit then pour 2 cup portions into freezer bags and freeze.
To can: Heat the applesauce until it boils, then spoon it into clean, hot jars, leaving 1/2 inch headspace. Seal the jars and process in a boiling water bath for 20 minutes.
