does anyone have some recipes for making homemade marmalade? I am especially looking for peach and orange (not together). also, i remember that the jars are supposed to be boiled in one of those big pots and you have to use special tongs to get them out, but i learned in europe, they just put the jars in the oven for a little while at 100 degrees celcius ( 212F- boiling point). doesn´t that seem much less hassle? do people in america do that also? ______________________________

The method of heating jars in the oven is used when sealing the jars with wax. Although this is a very popular way of perserving jams and marmalade, it does not always give you an airtight seal. Products sealed with wax should still be refridgerated, while canned items are shelf stable for long periods of time.
