I see that Martha Stewart always uses a Silpat liner when baking, are they any better than just greasing and where would I get one?

Kittypal - it's so funny you ask that today cause I was wondering myself if they are worth the $$. You can get them at any kitchen type store - like William Sonoma, Kitchen Etc., or any restaurant supply store.

Were you, by chance, watching Martha make her own fruit rolls this morning?

They do work quite well, especially if you don't want to use grease for the cookie sheet or if you're baking something especially gooey.....my issue with them is the cost - they are rather expensive I think. I was just looking online and found a place that a cookie-sheet size is only $19.99. The ones I've seen in stores range from $40 to $65, so this definitely sounds like a deal. There were a couple of sites I found at around the same price - so much better than buying them at a kitchen store in person!

Silpat is amazing. A household size sheet is about $20 US. May be used about 2000 times. Nothing sticks. I have only only used it for sticky things, meringue, dacquois, florentines etc. Will change your culinary life and allow you to experiment with very thin shapes and sizes beyond the ability of a greased sheet. No grease is necessary, unless you want to spray potato sails with butter or oil for extra crunch.

One restaurant made paper thin decorations(sails) by baking large sheets of translucent potato slices (unrolled Japanese style on a machine). They become huge sails of golden parchment when oiled and baked on silpat. Like phyllo. Look unreal and taste great. Super garnish. etc...

Neat, I will have to get one. Lydia yes I was watching Martha today. I know she has them on her web site for sale that's why I was wondering if she was promoting them just for profit or if they were really worth it. Thanks for the info.

They are worth their $$$$ if you do any sugar work. It is an invaluable tool in making suckers/lollipops or tulle cookies.

The recipe for the Dish Pan Cookies I baked this weekend called for an ungreased cookie sheet. The cookies stuck. Tried Pam spray, cookies stuck. Greased sheet and cookies stuck.

Went to Bed, Bath and Beyond and bought a silpat sheet. $20 US. The cookies did not stick. Silpat also aided in transfering cookies to the cooling racks. I picked the sheet up (it is flexible) and placed sheet and cookies on rack. Let cool. Then I was able to slide the cookies right off the sheet to the rack to finish.

Now I wish I had bought two of them.
