I don't really have a recipe, but a question. Do any of you chefs out there cook with a clay pot. Soak the top and bottom in water, put it in a cold oven, and crank up the heat to 475.
I mainly do poultry; a 14 lb turkey is done in 2 1/2 hours. For the holidays this year I was thinking of a standing rib roast. Anyone know how they come out in a clay pot and how long I should cook it so the middle is rare to medium rare?

Wish I knew more about Clay Pot Cooking...Seems to me it might be a style of cooking from the SW area (Arizona, New Mexico )Wish I knew more about it...

Do you know a site about it ????

How do you clean the pots..? If you cook a "big bird" in one, and as pores as the clay is, whats the cleaning method...

Down here in Florida, I would be temped to put the pot next to a Fire Ant mound and let them eat away... d(thats the best way to clean up an Alligator head..)

Thanks for the website. I clean the pot by letting it soak in hot water and baking soda.
The clay will absorb soap.
