Many thermometers are now filled with more environmentally safe liquids than mercury. All that is required is that the fluid expand and contract with changes in temperature.
Lower temperature applications require a compound that will not freeze in the specified range. This was true even when mercury was the predominant fluid. Below -40, for example, thermometers may use substances such as toluene or pentane.
