Respiration is a biological process that consumes oxygen and produces carbon dioxide by "burning" organic molecules for energy. Because respiration is part of biochemistry, the reactions occur over a narrow range of temperatures and are largely dependent on and controlled by enzyme catalysts. Carbon monoxide is such a deadly gas because CO has over 200 times the affinity for hemoglobin as O2 does, so CO blocks oxygen transport in red blood cells, affecting every tissue in the body. I'm not a chemist. If you need a more chemistry-oriented answer then I defer to the experts here.
