I'm going to have to think about this one, but I'm not convinced by mommeytimestwo's explanation for three reasons: 1) Heating glass will not make it expand to the the point where it will be significantly more water-permeable. 2) I've done this with the top off the jar an it still worked. Considering the amount of steam that had to have made its way inside the jar this way, i'm doubtful that it has anything to do with water. 3) I'm pretty sure I read an article in Applied Spectroscopy that used infrared reflectance to analyze honey. Among other things, I'm pretty sure they showed that water content does not correlate with crystalization.
On the other hand, I don't have a better answer yet.
