2 Cup Light Soy Sauce 2 Cup Broth or water ½ Cup Brown Sugar ½ Cup Cooking Sherry or wine (White Wine) 2 small Shallots, minced 2 slices Ginger, minced 1 Chicken, cut up (you can also use just drumsticks or thighs) 3-4 Star-Anise
Method:
Place all the ingredients into a large pot and bring to a boil. After the mixture has boiled, add the chicken pieces and boil for an additional 30 – 40 minutes. Drain and serve. This dish can be served hot or cold. You can reserve the liquid for the next time you decide to make more Soy-Sauce Chicken. Just let it cool down and strain to remove any bits of bone and place in a suitable container with a lid and place in the fridge. I have had my mixture now for about 2 years. +++++++++++++++++++++++++++++++
Cool 04-04-05, 03:19 AM SeattleRon cswchan,
excelent recipe. it almost sounds similar to a filipino dish called adobo. When I tried your's out though it tasted just a tad diffrent. I think it was the ginger. Other than that when I served it, Everybody enjoyed it. The sherry was a diffrent thing. Everyone enjoyed it.
