I needed a way to cook chicken legs and made this up. I believe it would be considered Italian because of the ingredients I used (similar to chicken caccatorie(sp?) any suggestions?
7 chicken legs 1 28oz can crushed tomatoes 1 8oz can tomato sauce 1/4 c Merlot wine 1 large onion diced 2 large garlic cloves minced 1 tsp basil 1/2 tsp oregano salt and pepper celery salt 3 carrots peeled and diced olive oil
In large dutch oven brown chicken legs, seasoned with salt and pepper and celery salt, in olive oil over med-high heat turning often with the lid on. Remove legs and take off skin, place chicken legs back in pot and add onion and garlic and let swet until just translucent. Deglaze with wine for 2 minutes (being sure to scrape bottom of pot to remove bits)add carrots, then turn heat down to medium cook until wine becomes thick. Pour in tomatoes and sauce and add spices.
Reduce heat and simmer for minimum hour to 2 hours. Serve over favorite pasta along side a large garden salad and garlic bread. 10-09-02, 03:14 PM Shawn I didn't even get any! It was all gone when I got home last night. They ate it all. They were all happy with the results. My 12 yr old especially, he said the chicken melted in his mouth, hardly any chewing required!
Next time though I will save us both a sample! big grin wink
