preheat oven to 350 degrees mix together mustard and worcestershire sauce in a shallow bowl. In a large ziplock bag, mix together breadcrumbs & Parmesan.
Dip the chicken in the liquid mixture, put into bag & toss. Make sure to well coat the chicken. Place on a baking sheet. If you have any of the crumb/cheese mixture left, you may place more on top of the chicken. Otherwise, discard. Bake in the oven for about 30 min. It is recommended that you bake chicken on a plain baking sheet. What I mean is you can use a non stick spray but no foil. I have found that if you use foil, the bottom of the chicken gets all mushy and gross.
I usually make my Parmesan chips to go with this. For that, you will need:
4 med. potatoes, with skin, thinly sliced about maybe 1/2 an inch 1/2 a stick of butter/margarine 1/4 tsp. salt 1/2tsp. pepper 1/2tsp. cayanne parmesan cheese (fresh or the other is fine. I've used both)
Melt butter mix with seasonings.(no cheese, yet) upon slicing potatoes, dip each slice into butter mixture. Lay out on a baking sheet. (foil or no it doesn't matter w/ this one) Bake for about 45 min. upo coming out of the oven, sprinkle with a generous amonut of the permesan cheese.(if using fesh, I usuallu pop back in the oven for about 2 min. or so to melt the cheese)
Now remember, if you do make these with the chicken, the potatoes take a tad longer to cook,so you may want to start the potatoes fitst.
Enjoy!! =)
