This flan is great because it´s got cream cheese. We in Mexico call it "cheese pie" But it has a taste texture more similar to flan.
+1 can of evaporated milk +1 can of sweetened condensed milk +1 package of cream cheese +1 egg +1 teaspoon of vanilla +3 tablespoons of sugar
1. Cook sugar over low heat in a small pot so it makes caramel. Once it is caramel, take it out of the heat. Move the pot so the caramel covers the sides of the pot as well as the bottom. Put aside.
2. In a large pot put a few cups of water to boil. Just enough to be able to stick the small pot inside and the pot doesn´t touch the bottom and doesn´t tip over.
3. Then in a blender mix the egg, vanilla, condensed and evaporated milk and cream cheese. Blend well.
4. After a while you will hear the caramel in thepot start to crack. This means it is cooling. Once the cracking sound has slowed down, pour the mixture from the blender into the pot.
5. Add this small covered pot into the large pot with boiling water and cover the large pot as well. Let it cook for about an hour or until a toothpick comes out clean from the center of the flan. (It might still by jiggly). Be sure that ther is always water boiling or else your flan will burn.
6. Take the small pot out of the large pot when done and let it cool. THen let it cool for an additional 2 hours inside the fridge. Then turn the pot over onto a plate and enjoy your homemade flan!
There´s a word on how this cooked. It´s baño maria in spanish. Sorry I couldn´t remember it in English.
