In a big bowl put all the following: 2 lbs of sirloin beef cubes,a chunk (one eight of a pound) of salted pork (lard),about 12 baby onions,4 to 5 sliced carrots,1 sliced leek,2 sliced celeri sticks,3 chopped garlic cloves,

Along with that:2 cups of red wine,2 cups of apple juice,one cup of water,one can (10-12 oz)of beef consommé.

2 bay leaves,one table spoon of fresh thyme (I use lemon thyme from my garden humm!),two table spoon of Italian parsley.Refregirate all together for 24 hours.After this point you may get rid of the salted pork or use it.

Separate the meat, the veggies and the marinade.In a big pan or wok....use one quarter cup of olive oil and cook the beef cubes on each side until slightly brown.Sprinkle 4 table spoons of flour on the meat and mixe well on medium heat for about 2 minutes.

Pour the marinade on the meat and stir well, you will obtain a broth,cook until it broils,then remove immidiately from stove.

In another pan use 4 table spoon of butter and cook (blanchir) the veggies until somewhat tender (about 5 minutes).Add to the meat. With the same pan, cook in butter one pound of sliced mushrooms,add to the meat. Add 2 table spoon of tomato paste.Cook on the stove for two hours on a low medium heat (do not cover up).

I personnaly add 3 table spoon of fresh heavy cream just before serving.Will serve 6-8 guests.

You serve with your favorite potatoes on the side.
