Minced meat 1/2 kg (beef, but lamb or any meat will do) Mix it with two bread pieces. Salt to taste. Green pepper crushed. Black Pepper to taste. One egg. One table spoon of besan* (aka chana flour, besan, kadale hittu, chickpea flour, garbanzo flour)
Mix it all. Blend it well. Put some cumin (aka comino) seeds and continue mixing. Put it in fridge for an hour.
After one hour take it out and make 'small kabab' (not big).
Heat oil in fry pan and deep fry these kababs till they get light brown.
In another pan fry crushed onions in oil (half an onion is enough). They should get light pink.
Now add half table spoon ginger and half tablespoon garlic paste.
Add one teaspoon black pepper and red chilie to taste.
Half teaspoon salt and mix it well (in the pan).
After a short while, add tomato paste (one small pack). (probably 1-2 oz. - DG)
Mix it well. Add half cup water, mix it well on low heat.
Now put those fried little kebabs in paste and sprinkle two tablespoons of lemon juice.
Add one tablespoon of chopped Hara Dhania (aka cilantro aka coriander Leaves).
Add another half cup of water and mix.
Put the top on the pan and let it simmer for almost 10 minutes (at low heat).
Serve with with nan/pita bread. (If you don't have nan or pita bread, use slightly baked flour tortillas. You can also serve this with plain rice or a pilaf. - DG)
*Gram flour contains a high proportion of carbohydrates, but no gluten. It has a slightly nutty flavor and earthy aroma. If you've ever had hummus, you'll recognize the taste.
