I have some spots of mold/mildew growing on the upholstery of my car seat (velour type material). Any suggestions of what to use that won't bleach out the dye in the material and get rid of the mold ?

Try using white vinegar in a spray bottle. Saturate the effected area and let it soak a few minutes. Then take a soft brush, and see if it comes off. I have had success in getting mildew off of suede and leather, as well as other fabrics in this manner. Then leave your car door open to dry the vinegar. The vinegar smell will disapate within an hour or so. Upon drying, it has a nuetral smell. There is something in vinegar that will eat up mildew and not harm other surfaces. On clothing, soaking in buttermilk will also do the trick, but please don't use buttermilk in your car, as the smell would never come out.
