INGREDIENTS 4 - 5 lbs chicken (I used whole chicken) 1 lg. onion sliced 15 oz can diced or crushed tomatoes Two 6 oz cans tomato paste 1/2 cup finely diced celery 2 cups cooking wine (burgundy or sherry) 1/2 lb sliced white mushrooms 1 Tbsp olive oil 2 tsp [URL=Pickapeppa Sauce]Pickapeppa[/URL] sauce 2 cloves minced garlic 1 tsp basil 1 tsp oregano 1 tsp coarse ground black pepper
PREPARATION •Pour olive oil in bottom of crock pot, wiping around inside of crock pot. •Place sliced onions and garlic and celery in bottom of crock pot •Place chicken in crock pot. •Sprinkle basil,oregano & pepper onto chicken •Mix together remaining ingredients and pour over chicken. •Cover and cook on high 4 - 4½ hours till meat is ready to fall off bones.
SERVING •Serve with your choice of pasta, rice, or even couscous, pouring generous amount of sauce and mushrooms on top.
Note : Again, if you make a large amount, be sure to save and freeze some of the chicken to make one of the many delicious recipes in this forum which can be made with cooked chicken.
