boneless pork loin
cooking spray
1 can (16 oz.) whole-berry cranberry sauce
1 TBSP brown sugar
1 tsp. prepared mustard
2 TBSP cornstarch
2 TBSP water

Spray crock pot and put in roast. Combine cranberry sauce, brown sugar and mustard; pour over roast. cook on high for one hour. Reduce to low-heat and cook for 6 hours. Remove roasat from slow cooker, reserving cranberry mixture in cooker. Set roast aside and keep warm.

Combine cornstarch and water, wisk until blended. In a glass dish, gradually stir reserved cranberry mixture into cornstarch mixture. Microwave on high for 2 minutes until thick, stirring after one minute. Serve sauce with roast.

For all of you weight-watchers out there, there are 5 pts. for 3 oz. of meat and ¼ cup sauce.
