This is my favorite recipe of all time I think. My grandmother used to make it and I think I love it so much because I think of her everytime I make it! Super, super easy, and wonderful as leftovers!

4 whole chicken breasts, skined
flour tortillas (about 6-8), torn into strips
dash of onion powder
1 can cream of chicken soup
1/2 can of Rotel
2 c. cheddar cheese, cubed or shredded

Bone and cut cooked chicken into large pieces. Mix soup and tomatoes. (You can add a little milk to make it thinner, but in the crockpot, this mix will come out fairly soupy anyway.) Butter crockpot. Place a layer of tortilla strips in crockpot. Add half of the chicken. Pour half of soup mix over chicken. Add half of cheese. Repeat layer. Cover and cook on low for 6-8 hours or until tortillas are tender and cheese has melted.

This sounds awesome Jenni! I'm hoping that it works in a conventional oven as well, since I currently don't have a crock pot. I'll let you know! Cool

Giz, if you do it in the oven, just add more soup and milk. The crockpot recipe cuts back on the liquids since in tends to get soupy through that slow cooking!

Nechama, you might want to substitute a can of enchilada sauce or green chile for the soup. You could mix in the rotel or leave it out, your choice. The soup and cheese mix together well, and I'm afraid it wouldn't taste quite right if you left out one. Green chile would probably be the way to go.
