3 lbs. ripe tomatoes, peeled and cut up (abt. 4 cups) 2 green peppers, finely chopped 2 onions, finely chopped 2 tart apples, cored and finely chopped 1/2 to 1 cup sugar 1 tbs. salt 1/2 tsp. pepper 1 tsp. cinnamon 1 tsp. cloves 1/2 tsp. allspice 1 tsp. nutmeg 1 cup cider vinegar
Cook the tomatoes slowly for about 30 minutes, until they are soft. Stir in the peppers, onions and apples and cook 30 minutes more. Add the remaining ingredients, adjusting the amount of sugar to taste. Boil until thick, about 10 minutes, stirring and taking care not to let the mixture burn.
Spoon into hot, sterilized jars, leaving 1/8 inch headspace and seal. If you wish, process in a boiling water bath for 15 minutes. ________________
07-31-03, 10:21 PM K.K. I don't have a kitchen scale. Could you tell me approximately how many tomatoes of average size that would be? I can see a cooking weekend coming up...
07-31-03, 10:27 PM Di Don't you hate these recipes that list by pound?? I never think to break them down to numbers as I am able to just grab more from the garden.
I'd say 4 large or 6 medium K.K.
You can always go over the called for amount and it shouldn't matter that much if at all.
Hpppy cooking! Big Grin
