1 medium onion, chopped 1 medium bell pepper, finely chopped 2 (15 oz) cans tomato sauce 2 (12 oz) cans tomato paste 1 (7 oz) can pitted ripe olives (drained and sliced) 2 cups sliced raw mushrooms 2 cups sliced raw okra 2 cups water 1 (12 oz can beer of your choice) 1 Tbsp sugar 1 tsp oregano 1/2 tsp crushed basil 2 cloves fresh garlic, minced 1 whole bay leaf 1/2 cup parmesean cheese 1/4 cup extra virgin olive oil
Saute onions and bell pepper in the olive oil until tender. Put all of that into a stock pot. Add remaining ingredients. Bring to a boil, cover and simmer on low for 1 1/2 hours. This will also work in a larger crock pot. This is enough sauce to cover 1 lb. of spaghetti noodles. You may also choose to drop your favorite meatballs in the sauce at the beginning of the simmer time.

One question... my mom used to make Italian Tomato Sauce as well... but it always had this burned sort of flavor... perhaps from too much tomato paste.. and I never really liked it....
Does this have a similar flavor?
11-14-03, 07:44 AM angela-cc No burned flavor at all. But you need to stir every 10 to 15 minutes to prevent sticking. By the way the beer is optional. Just my personal taste.
