how can you forward mail to different people without everyone seeing everybody elses address?

Yes. Open a New Mail window. If you have the addresses in your Address Book, click To: or Cc: to bring up the Address Book. Hold a Control key while clicking each recipient's address, then click Bcc -> and OK.

You can also enter addresses manually, of course. To bring up the Bcc line, click View and All Headers. Enter the email addresses, separating them with semicolons ( ; ).

I have a trick in Yahoo mail, although this may not work for other mail services.

Put everyone that you are forwarding the message to in the BCC (Blind Carbon Copy) form field and type a space in the To form field. That space registers that I sent the message to "undisclosed recipients."

You can always put yourself in the TO field and put everyone else in the Blind Carbon Copy (BCC) field. I suppose this works the same as the space, however some providers will not allow a space, and that way you won't get an error message back.
