The one dish that I've received many compliments on is my chicken stew. I go liberal on the meat and I find the more salt the better.
Ingredients
1 whole chicken (remove innards) 2 bey leaves 1 fresh garlic clove 1 whole onion 1/2 bag of egg noodles 2 whole potatoes Fresh Mushrooms 1 Can corn 1 can Green Beens 1 Can Peas Salt and Pepper to taste 2 Celery Sticks 2 Chopped Carets Procedure
1. Boil chicken in a large pressure cooker until all of the meat falls off of the bone. You may have to add water. While chicken is boiling, Peal potato's and chop into large chunks, chop carrots, onion, celery, mushrooms and garlic cloves.
2. Strain the broth into a large bowl and then place the chicken on a large cookie sheet so that you can sort out all of the bones and gristle to be discarded.
3. Add the broth and the meat back into the large pressure cooker.
4. Add all chopped and canned vegetables and two bey leaves. You can add the water from the can of corn but strain the peas and green beans. Let cook for 10 minutes before adding salt & pepper.
5. In a separate pan, cook egg noodles. Add to stew when potato's are soft.
6. Now add salt & pepper to taste
7. Don't overcook or the potato's and noodles will turn to mush.
This makes about 20 servings and freezes well. The best bart is that it can be made for under $10.00 Serving Information
