First off, YES! I spell tomatoe with an E Razz

Secondly, does anyone have a favorite recipe for tomatoe soup? Preferably smooth and creamy, no chunks of tomatoes. Seasoned with garlic and or basil??

1 small onion, chopped
2 garlic cloves, minced
2 tablespoons pure olive oil
2 (28-ounce) cans diced or crushed tomatoes
2 (6-ounce) cans tomato juice
1/4 cup dry white wine
1/4 cup chicken broth
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/2 teaspoon pepper
1 1/2 cups whipping cream, divided
1/4 cup fresh basil leaves

Sauté onion and garlic in hot olive oil in a Dutch oven over medium-high heat until tender. Add diced tomatoes and next 5 ingredients. Bring to a boil; reduce heat to medium, and cook 30 minutes. Cool slightly.

Process tomato mixture in batches in blender on low speed until smooth, stopping to scrape down sides. (Caution! Hot liquids create steam which will blow the top off the blender! Be sure to securely hold blender lid down!) Return to Dutch oven, and stir in 1/2 cup whipping cream. Cook just until thoroughly heated.

Process remaining 1 cup whipping cream and basil in blender on high speed until smooth; swirl into each serving.

Makes 10 cups.

Creamy Tomato soup
Serves 4

Tofu and olive oil create a Mediterranean flavour to this hearty soup

Ingredients:

8 oz. (225g) tomatoes, skinned and chopped

1 x 10 oz (290g) pkt. silken tofu

1 onion, chopped

1 clove garlic, crushed

1 green bell pepper, chopped and seeded

2 tablespoons tomato puree

2 teaspoons of freshly chopped basil

1/2 pint (285 ml) vegetable stock

1 tablespoon of olive oil

Cooking Instructions:

Fry the onion, garlic and green pepper in oil for about 2 minutes, or until softened

Add the tomatoes, puree, basil and stock, cover, then cook for 30 minutes, till peppers are really soft

Allow to cool slightly then puree in a blender with the tofu

Season to taste then re-heat and serve
