2 ½ cups shredded fresh beets.
I cup chopped carrots
I medium onion, chopped
3 cups water
2 tsp. Salt
1/8 tsp. Pepper
2 cup beef broth
1 cup shredded cabbage
1 tblsp. Butter
1 tblsp lemon juice
½ cup dairy sour cream (Optional)

In a kettle, cook beets, carrots, onion, water, salt and pepper until vegetables are tender, about 20 minutes
Add beef broth and cabbage. Cook uncovered 15 minutes. Stir in butter and lemon juice. Spoon into bowls. You can also a spoonful of soup cream in each bowl, I personally have never tried it though. Makes 6 servings.

My Mother used to put some beef
in it as well.. and for the sour
cream... It's a MUST - very yummy!

Never tried it with sour cream? I've never tried it without (was told it was a must by the Ukrainian woman who made it).
