1 1/2lb. beef cubes 1 cup diced celery 6 carrots, quartered 2 cups canned tomatoes 3 onions, quartered 6 small potatoes 1 can peas with liquid 1 slice bread (tear into bits) 3 Tbsp. tapioca 3 Tbsp. sherry wine 1 Tbsp. sugar salt and pepper to taste.
Place all ingredients uncooked, into roaster pan and seal with aluminum foil. Cover roaster with lid and place in 350 degree oven for 45 minutes. Reduce heat to 250 degrees and bake for 5 hours. Don't peek until done. Serve with hot rolls.
This is a big hit with my kids they all love it. One of the many recipes past down from my mom. ++++++++++++++++++++++++++++++ 03-15-04, 10:34 AM Lydia Beth, Is this REALLY thick??? It sounds like there is very little liquid given that you are cooking for so long...especially with the starch of the potatoes, tapioca and bread...
(does sound yummy though!)
03-15-04, 08:50 PM Beth000376 Lydia its thick but there is still some juice left when its done. You can add a cup or two of water and a beef cube if you prefer more juice to your stew, that's how my sister does hers.
