8 Turkey Wings(With most of skin off) Turkey Wing Soup
4 Cups thinly sliced onions(divided) 1 Bunch of Celery and tops(course chopped and divided) 1#Carrots scrubbed and cut half inch round(divided) 1 Red bell pepper (chopped and divided) 6-8 0z. uncooked spagetti 1/4 C. Course chopped cilantro 1 Tbs. Kosher Salt 1 tsp. course ground black pepper
Put turkey wings in a large stock pot, add half each onions, celery, carrots and bell pepper all of the salt and pepper cover with 3 quarts of cold water. Bring to boil, reduce and simmer covered for 1 1/2 hours or until wings are tender. Remove wings to platter until cool enough to handle. Skim any fat off of broth then strain out cooked veggies. Return broth to stove and add the rest of the onions, carrots, celery and bell pepper. Bring the broth to the boil, break spagetti in half and add to boiling soup. Taste broth and adjust seasoning. While veggies and spag. are cooking, debone the wings and chop meat into bite size pieces. When veggies and spag. are tender add meat and chopped cilantro to broth stir, remove from heat cover and let stand 10 min.
