What is happening is that you're clicking the close button at the top-right of the screen, which closes the Firefox window an all tabs opened within it. You'll notice that on the tab bar, you'll see a little X at the right side. This is what should be used to close a tab! New tabs can be created by pressing Ctrl+T or double-clicking in a empty space along the tab bar. By default, Firefox will open new windows into new tabs. To disable this behavior, open the Options window, then click Tabs. Select "a new window" under "New pages should be opened in:". This will prevent new tabs from automatically being opened.
