How about this for an idea.
Why not have several of your more ambitious students write an original blues???
Since most blues is a 12 bar pattern,with the second 4 bars a repeat of the first 4 bars,followed by the last 4 bars being different than the first 8 bars, you could teach them how to write as well as understand the form of the blues,{A A B }or question,question ,answer.
Since many blues also use riffs[ [a pattern that is repeated],they would also learn how to create their own riffs.This would also help them to improvise.
The blues tunes could then be played in unison style,all horns play the same melody.No need to harmonize all of the horn parts.
You may get them more involved than if you stuck a stock arrangement in front of them.
