Booze comes from the Middle English bousen, which comes from the Middle Dutch busen, which means to drink heavily. They are related to the Middle High German bus, meanining "to swell, inflate." The noun form seems to have come later (first recorded in 1859) and was reinforced by the Philadelphia distiller E.G. Booze.
