2 cans red kidney beans, rinsed and drained 1 can cannellini beans, rinsed and drained 1 can garbanzo beans, rinsed and drained 1/2 red onion 1 green bell pepper 2 stalks celery 1 large tomato, diced ¼ cup fresh mint 1 bunch fresh cilantro 1/8 cup fresh tarragon 1/8 cup fresh dill 1 teaspoon garlic powder or to taste 1/2 t mustard powder celery salt, to taste olive oil lemon juice (or red wine vinegar) salt and pepper to taste
Mix all ingredients together. Don't be afraid to add different types of fresh herbs... they all work well in this salad.
Refrigerate at least 2 hours to allow the flavors to come together.
