My garden is producing way to many cucs ! Any ideas on how to prepare cucumbers besides in a salad ? No pickles either, I'm not that ambitious ! _____________________
09-06-02, 05:30 PM Fritzzs Living down here in the land of Avacados, If I have a bumper crop, I contact my local "little" grocer and they are usually really glad to buy them...Maybe so with your "cucs".... Then again, a "FREE CUCS" sign works wonders and makes many happy.....
09-07-02, 02:20 AM MrSensitive CHICKEN CUCUMBER SOUP peel 6 med-large cucumbers chop into small cubes place in a gallon of water and boil. Simmer for about 2 hours add chicken base or chicken boullion cubes (about 8-12) add chunks of cooked chicken Simmer for 1 more hour Eat. Delcious. Yum.
Chicken Cucumber salad Mix chicken, mayonaise and cucumber bits together and spread on lightly toasted (light)rye bread. For an extra zest, grill sandwich instead, with sharp cheddar until cheese melts.
To Die for!
Feel free to add blended cucumber to any soups or sauces for an extra Cuke-Kick. I love it in my spaghetti sauce.
I also like to toss cucumber bits on my nachos!
Be sure to blend some cucumber and freeze it so you can add it to your Thanksgiving stuffing- and instead of butter or glaze, brush your Thanksgiving turkey or Christmas ham with the cucumber sauce as well!

If you'd like this complicated $$$ restaurant recipe let me know. It would be good with chicken if there'r no royals around.

med cuke julienned 2 tb w vin (palm sugar vin, rice vin) 2 tb sugar 1 tsp salt 1/4 t white pepepr optional 1/2 small onion, thin slices lenghtwise optional hot chile garlic paste to taste.
Quick. Great with Grilled Thai chicken marinated in green curry, coconut milk. Or anything spicy that needs some sweet hot n sour.

marinated in 1/4c coconut milk (either reg or lowfat ) with 1 Tsp Thai Green Curry Paste (Maesri Brand) 1/2 tsp India curry powder 1 tsp Sesame oil 2 tb soy 1 tsp sugar
Grill á point (cooked through but tender and juicy). Baste w marinade. Cook turning until brown Serve on julienned lettuce with Thai basil , thin wedges of tomato, chopped scallion to garnish, Jasmine rice, side of the Cucmber "Salad."
Hint -Don't marinate the chicken long. A few hours.
my take on a favorite dish from a local restaurant dish. Medium spicy for beginners.
