Anyone have a recipe for cole slaw??? I don't like it, but want to make it to go along with pulled pork & baked beans I'm making...anyone have an easy, basic cole slaw recipe????? _______________________________

Apple Coleslaw
4 cups shredded cabbage 1 cup shredded carrot 1 Granny Smith apple - peeled, cored and coarsely shredded 2 tablespoons honey 1 tablespoon brown sugar 2 teaspoons white vinegar 1 tablespoon pineapple juice (optional) 2 tablespoons mayonnaise 1 dash salt 1 teaspoon ground black pepper
Place the shredded cabbage and carrot together in a bowl with the sliced apple, and toss to combine. In a separate bowl, stir together the honey, brown sugar, vinegar, pineapple juice, and mayonnaise until the honey and sugar have dissolved completely. Pour over the salad, and toss to coat. Season with salt and pepper, and toss again. Cover and chill until ready to serve. (It's tastes best when allowed to chill overnight.)
Yield: 6 Servings
Note: Do not substitute sweetened sandwich spread or Miracle Whip for regular mayonnaise or the cole slaw will become too sweet.

Also - - since I'd need to prepare this and chill overnight - - are the apples going to turn all brown?

* I would buy pre-shredded cabbage. Most big supermarkets carry it. If you do, eliminate the carrot from the above recipe.
The apples shouldn't turn brown because they are coated with the sauce. -------- The sweetness of this slaw is perfect for a tangy sauce with the pulled pork. 11-30-05, 02:02 PM Lydia OMG - - that's a boatload of cole slaw!!!!! Why would I eliminate the carrot?

If 4 cups serves 6, then to serve over 8 times as many people, you'll need over 8 times as much slaw. 6 people X 8 = 48 people 4 cups X 8 = 32 cups
An easy thing you can do is to take a bag of cole slaw mix (where bagged salads are in store) and add some extra things to it. You could add a grated onion, sweet pickle relish, tsp. of sugar and mayonnaise. It is pretty good that way.
