In my quest to come up with simple quick meals for my family while I am in school,this one came to me. All you need is a bag of salad greens, a bag of seasoned beef strips (like the kind you use for fajitas) a bag of shredded cheese, sliced fresh mushrooms and sliced vidalias. Mix the salad, mushrooms, cheese and onions in a large bowl. Cook the meat according to directions ( do this in the microwave, it takes 3 minutes) Arrange the salad mixture on a plate or in a bowl and top with the cooked beef strips. Do not add the meat until ready to serve.The lettuce should be cold and the meat should be hot.Top with your favorite dressing (ranch is wonderful) I serve this with 5 cheese garlic bread.
