Sweet Corn Relish

Ingredients

4 1/2 whole kernel corn
1 1/2 cups diced red peppers
1 1/2 cups diced green peppers
1 cup finely chopped celery
1 chopped onion
1 cup sugar
2 1/2 cups white vinegar
1 tablespoon salt
1 teaspoon celery seed
1 teaspoon chopped garlic
1 tablespoon dry mustard
1 teaspoon tumeric
1/4 cup corn flour
1/4 cup water


Method

Combine all ingredients together except corn, cornflour and water in a large saucepan. Cover and bring to boil.

Add corn. Cook 15 minutes longer. Thicken with cornflour and water. Reduce with simmering.

Pour into jars.
