This is a well known dip in this region and it is very easy to make and delicious. It may be prepared ahead of time and frozen until needed.
Bongo Bongo Dip
1 (10 ounces) package frozen chopped spinach, thawed and drained 1 (8 ounces) packages cream cheese (soft) 1 can water chestnuts (drained and chopped) 16 ounces sour cream 1 packages hidden valley ranch dressing mix 8 ounces shredded Colby Monterey jack cheese (reserve aside about 1 ounce of cheese)
Preheat oven to 350 degrees.
Beat sour cream and cream cheese together; add all other ingredients except the reserved cheese. Hand stir the ingredients with spatula or spoon. Do NOT use mixer as the spinach will turn the dip green. Spread the dip into a baking dish, sprinkle cheese reserved on top. Bake for approximately 30 minutes or until cheese is bubbly. Serve hot with toasted French Bread or toasted Garlic Bread slices. ____________________________
