1 cup (4 ounces) shredded mild or sharp cheddar cheese.

1 cup (4 ounces) shredded Montery Jack cheese

1 cup (8 ounces) sour cream

3 ounces cream cheese softened

1 can (16 ounces) refried beans

1/2 cup picante sauce ( any strength)

2 teaspoons chili powder

1/2 teaspoon ground cumin

In a small bowl, mix the shredded cheeses together. In a large bowl, combine the sour cream, cream cheese, refried beans, picante sauce, chili powder, and cumin. Mix thoughly by hand or electric mixer. Spread half of the bean mixture in an 8 inch square baking dish coated with non stick spray. Cover with 1/2 the shredded cheese. Add remaining bean mixture; top with remaining cheese. Bake for 20 minutes or until heated through in 350 degree oven.

You can make this ahead and just re-heat when needed. Serve with tortilla chips.

Here is another Mexican style dip...

Fantastico Mexican Dip

2 1/2 pounds lean ground beef
15 ounces taco sauce
16 ounces sour cream
8 ounces softened cream cheese
1 pkg taco seasoning mix
16 ounce shredded Cheddar cheese
1 cup shredded lettuce
1 tomato, cubed or 1 can petite diced tomatoes, drained
2 green onions, sliced
2 ounce sliced black olives, drained

Browm ground beef over medium high heat in a large, deep skillet. Drain well, then mix in the taco sauce. Set aside.

Using a large bowl, mix the sour cream, cream cheese and taco seasoning mix. Spread the mixture into a medium serving dish.

Layer the sour cream mixture with beef mixture, Cheddar cheese and lettuce. Top with tomato, green onions and black olives.
