If I remember correctly, white smoke from a certain smokestack indicates "Habemus Papem" "We have a Pope." I think the smoke is from the burned ballots of the Cardinals. Black smoke indicates that wet straw was burned with the ballots, and no one had a 2/3 +1 majority.

Whe the Cardinals are voting, and a vote is taken, if no one Cardinal was elected, then black smoke will come out...
White , when a Cardinal is picked...
A few minutes later, the new Pope will appear on the balcony overlooking the square...
