Scald milk. Add the salt, sugar and butter and place in top of double boiler. Beat eggs and slowly add to the milk, stirring constantly. Add vanilla and rice and cook an additional five minutes, stirring frequently. Pour into 9x15 pan, sprinkle with cinnamon and place in refrigerator to cool and set for one hour. Serves 12 to 15.

2 cups milk ½ cup rice ½ cup light cream 1 tsp. vanilla 1/8 tsp. salt ¼ cup sugar 2 TBSP butter
place milk, rice, and salt in top of double boiler. Cook for about 30-40 minutes. Stir occasionally. Add rest of ingredients and cook until rice is cooked and creamy.
This is very good served with a little milk (or cream), butter, sugar, and cinnamon on top.
Our family serves this as a first course on Christmas Eve. I 8X the recipe (but not all the sugar) and cook it all day in a crock pot. Yummy!!

5 cups milk (1% or 2% work fine) 2 cups minute rice 1/4 cup sugar (1/3 cup if you have a sweet tooth) 1 teaspoon vanilla 1/8th teaspoon salt 1/2 to 1 cup raisins
Put all of the above in a heavy pot. Cook on medium heat for about 25 minutes or until rice is tender. Stir occasionally.
Put 2 egg yolks and 2 tablespoons of milk in a bowl and mix thoroughly. Add to rice mixture, stir fast!
This works well in the microwave. I set it for 6 minutes and then stir and then put it back for another 6 ...over and over until it is done, about 24 minutes.
