I need pie filler to puddings,etc. I'M dying for some home made bannana pudding. Like grandma use to make. And not having acess to instant pudding,I can't even make a sorry sub. like I use to when in the U.S. Thanks ++++++++++++++++++++++++++++++ 01-30-03, 01:42 PM Lydia HOMEMADE Banana Cream Pie (when I make banana cream pie, I use vanilla pudding, but you could increase the milk by about 1/4 - 1/2 cup and add 2 pureed banana's to the mixture). This recipe is for a 9" pie crust
2/3 cup sugar 1/2 tsp salt 2/1/2 tsp cornstarch 1 tbl flour 3 cups milk 3 egg yolks slightly beaten 1 tbl butter 1 1/2 tsp vanilla 3 large banana's (plus any you may put in your pudding).
In saucepan mix/combine sugar, salt, cornstarch, flour. Gradually stir in the milk. Cook over medium heat, stirring constantly until mixture thickens and boils. Boil for 1 minute. Remove from heat and slowly stir half the mixture into the egg yolks. Bring the mixture back to a boil - and boil for 1 additional minute stirring constantly. Remove from heat and blend in the butter and vanilla.
Arrange the 3 sliced bananas on the cooked & cooled pie shell in a deep pie plate. Cool (stirring occasionally) the pudding mixture. Pour over the banana's in the pie shell. When serving, top with whipped cream!!!

6 tbl butter 1 cup brown sugar (dark) 1 cup boiling water 3 tbl cornstarch 2 tbl flour 1/2 tsp salt 1 2/3 cups milk 3 egg yolks, slightly beaten 1 tsp vanilla
Melt butter in skillet, when golden brown, add the brown sugar. Boil until foamy (2-3 minutes) stirring constantly. Stir in the boiling water. Remove from heat.
In a saucepan, combine cornstarch, flour, salt and gradually add milk. Stir in the brown sugar mixture. Cook over low heat stirring constantly until boiling. Boil for 1 minute. Remove from heat - stir half of mixture into the egg yolks. Combine all ingredients again, bring to boil and boil for 1 minute longer. Remove from heat - add vanilla.
