This is a very good pie...but different..if you are looking for same old same old..don't bother

1 1/2 cup crushed vanilla wafers
1/4 cup butter or margerine softened
1/3 cup apricot preserves
1 carton (15oz) ricotta cheese
1/2 cup sugar
1 tsp vanilla extract
3 squares (1 oz each) semisweet baking chocolate, chopped
1/2 cup finely chopped toasted almonds
1/4c chopped, dried apricots
1 cup whipping cream, whipped
1/4 cup slivered almonds

Combine wafer crumbs and butter, press in to bottom and up sides of ungreased 9" pie plate. Bake @ 375 for 6-8 minutes or until lightly browned. Cool. Spread preserves over crust. In mixing bowl beat ricotta, sugar and vanilla until smooth. Stir in chocolate, almonds and apricots. Fold in whipped cream. Spoon into curst. Sprinkle with slivered almonds. Cover and refrigerate overnight.

6-8 servings

Shelster, do you think the type of wafer makes that big a difference? Have you ever tried using other kinds of wafers?

Nechama..I haven't tried any other kind of wafer, but I am sure any sweet wafer would do. I think if I were going to try any other crust for this pie, I would use either a traditional pie crust or vanilla sugar wafers...

Just my opinion though.

OOOOh, I bet you could do a graham crust too or even a chocolate (oreo) crust if you are a choc fan? Smile
