I said over in DP that I'd post my eclair pie, so here goes.

2 small boxes Jello instant vanilla pudding
1 box graham crackers
1 8 oz Cool Whip
1 tub of chocolate frosting

I've always used the sugar free pudding and the fat free coolwhip and the reduced fat graham crackers and frosting, but you can use the real thing if you want. Just as good either way.

Make up 2 boxes of Jello instant vanilla pudding according to PIE instuctions on the box.

Fold in an 8oz container of Cool Whip and set it aside.

Zap a tub of chocolate frosting in the microwave until it's pourable. It doesn't take long, so stir it up and keep an eye on it.

Here are the layers. In a 9 by 13 inch pan.

Graham crackers
Half the pudding mixture
Graham crackers
Half the chocolate frosting
Other half of the pudding mixture
Graham crackers
Other half of the chocolate frosting

Cover and refrigerate. The longer the better. Overnight is good. You want the crackers to get soft.

This also freezes great.
