1 ½ cup All Purpose Flour ½ tsp. Salt ½ cup Cold Butter, cubed 1 Egg 1 tsp. White Vinegar Cold Water
Filling:
2 Eggs 1 ½ Cooked, mashed sweet potato 1 ¼ Coffee Cream or Milk ¾ cup Packed Brown Sugar 1 tsp. Cinnamon 1 tsp. each Salt and Ginger ¼ tsp. each Allspice, Cloves and Nutmeg

Pastry:
Combine flour and salt in a food processor, fitted with a metal blade. Using the pulse button, cut in butter until the mixture resembles coarse crumbs. Beat together egg and vinegar in a measuring cup; add enough cold water to measure 1/3 cup. Add to the flour mixture and process until the dough begins to clump. Press the dough into a ball and refrigerate until chilled through. Roll the pastry between 2 pieces of waxed paper. Line a 9-inch pie plate with pastry; chill for 15 minutes.
Filling:
Beat eggs until foamy; blend in sweet potato, cream, sugar, salt and spices. Pour into the prepared shell. Bake at 425F for 15 minutes; reduce heat to 350F for 40 minutes longer or until tester inserted in the center of pie comes out clean. +++++++++++++++++++++++++++
