I have to tell you guys about this fabulous dessert I made the other night at a BBQ I had. I don't have a name for it, and thought this was cute. It helps to have a nice gas grill with a burner to do this, but anyone can make it.

You'll need:
1 fresh pineapple, cored and sliced into rings
1 can of cherry pie filling
brown sugar
rum - Bacardi is great, but any will do
brandy

First, place your pineapple rings into a shallow dish and sprinkle with rum and brown sugar. Cover and let marinate for about 30 minutes.

Fire up the grill and toss on your pineapple rings. Grill until warm and a little crispy. Grill lines add a nice touch for presentation.

In a good, fire proof skillet, add the cherries. Cook until just warm. Add brandy (as much as desired). Be careful! The brandy will ignite!! Let alcohol burn off.

For presentation, add a sliver of angel food cake, a scoop of premium vanilla ice cream and top with a pineapple ring and a dollop of cherries flambe!
