(This started out as the recipe for Libby's Famous Pumpkin Pie, but I made a few adjustments when putting it into practice!)
Ingredients: 2 cups boiled fresh pumpkin meat, drained well (Another good reason for carving a Jack-O'-Lantern!) 2 eggs, slightly beaten ¾ cup sugar ½ teaspoon salt 1 teaspoon ground cinnamon ½ teaspoon ground ginger ¼ teaspoon ground cloves (If you do not have ginger and cloves, substitute ¾ teaspoon pumpkin pie spice. May also substitute this spice for cinnamon too.) 1 can (12 fluid oz.) evaporated milk And... 1 9-inch unbaked deep-dish pie shell (Can use 2 shallow pie shells, but I like one deep-dish better!)
Instructions: Preheat oven to 425°F. Mix filling ingredients in order given. For a really smooth filling, mix in blender! Pour into pie shell. Bake 15 minutes. Reduce heat to 350°F and bake an additional 45 minutes or until knife inserted near center comes out clean. (I usually have to bake at least another hour, especially with a deep-dish pie.) What if you don't have a pumpkin though? Could you substitute canned pumpkin?

And I forgot to add - to keep the edge of the pie crust from getting too done, you can put foil on it - not on the whole pie, just around the edge.

10-07-05, 03:35 PM Sarai Thanks! Now that it's October, I've started craving pumpkin pie, but can't find any canned pumpkin around here. Now it looks like I'll be making jack-o-lanterns after all, just to have an excuse to make some pie!
